Colombia Supremo 17/18 is sourced from small to medium sized family-owned farms located near city of Pereira in the department of Risaralda. This Colombia coffee is cultivated on farms that average 2.5 hectares in size. Producers pick and process coffee at their own micro-wet mills and the dry their own coffee typically on elevated tables inside solar dryers that provide protection from the nearly continuous rainy season. Colombia Supremo is the largest beans of all Colombian coffees. This coffee was grown at high altitudes of 1,400 to 1,750 meters. The plant varietals of Caturra, Colombia-Castillo flourish in rich volcanic soil with high levels of organic matter. Processing method is washed processing. Coffee flavor profile is orange, cherry, milk chocolate. 1) ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly.
